Origin & Terroir: The Power of Altitude
This coffee thrives under extreme conditions at 1889 meters above sea level. In the Jaen region, this high altitude means thinner air and significant temperature swings between day and night. This climate forces the coffee cherries to ripen more slowly, concentrating complex sugars and delicate acids within the bean. The result is beans with exceptional density and a rich, multi-layered flavor profile.

Variety & Selection: A Classic in Your Cup
At La Cueva Farm, two of the most respected traditional Arabica varieties are cultivated, Bourbon and Caturra.

Bourbon: Renowned for its deep sweetness and velvety, full body.
Caturra: Adds a bright, clean acidity and vibrant fruit nuances to the profile.

The combination of these two varieties, carefully selected with a 16+ screen size, ensures a homogeneous roast and a balanced taste in every batch we craft at our roastery in Sofia.

The Washed process was chosen specifically to highlight the true character of the terroir. After the careful removal of the pulp and controlled fermentation, the beans are washed with pure mountain water. This method provides a clean cup with striking clarity, no distractions, just the authentic spirit of Peru.

The Farmer’s Story: Artisanal Heart
In the small family farms of Jaen, artisanal labor is the foundation of everything. This is how quality is born:

Selective Hand-Picking: Instead of using machines, farmers walk through each row of trees multiple times over several weeks. They pick only the perfectly ripe, deep-red cherries, guaranteeing maximum sweetness.

Rugged Terrain & Dedication: Due to the steep slopes of the Andes, machinery is nearly impossible to use. Every sack of coffee is carried by hand, and every single tree receives individual care.

Precision in Processing: After the harvest, Aurora Huaman’s family meticulously monitors the fermentation and drying stages to ensure the beans develop without a single defect.
