    Not always a fresher coffee will taste better. But why? Because coffee roasting is not only about putting the coffee beans in the coffee roaster and taking it out whenever it is wanted. Even the best freshly roasted coffees in the world could taste bad if the person who roasts them does not know-how.
    On the contrary, it is an art, a handcrafted process that requires practice, experience, education, and knowledge to manage. That is why Martines Family Coffee Roastery, aiming for people to enjoy each cup of freshly roasted coffee, has specialized in this stage of the coffee process. Because of that, we define ourselves as a coffee roastery, no coffee shop, no cafeteria. In that way, we are not only able to provide freshly roasted coffee but also roasted correctly.
    Coffee, like any other agricultural product, through time, starts to oxidate or age. But it could be faster or slower depending on where the freshly roasted coffee is stored and if it is ground or beans. It has been proven scientifically, that whole beans stored in a package with aluminum walls and a valve under 22°C could keep their freshness for three weeks. That is why when coffees are roasted after the confirmation of the purchase, we pack them right away.
    About when should the coffee be consumed if it is freshly roasted? By the Specialty Coffee Association, one should drink their freshly roasted coffee after 24 hours of the day of roasting. However, there have been some assumptions that the best point where coffee develops entirely, its aromas and flavors, is after one week.
    Even if the coffees are freshly roasted, it does not mean that they are rich in flavor and aromas. Some coffees have more intense aromas than others because of many reasons apart from their freshness. For that reason, The Specialty Coffee Association (https://sca.coffee/research/protocols-best-practices ) has established in its quality standard cupping protocol, one parameter which is the intensity of aroma.
    However, the Martines Family Coffee Roastery team sees coffee roasting as a significant part of the coffee process. That is why we are specialized in this stage, and we do not consider ourselves as a coffee distributor, but yes as a coffee roastery with the purpose that people deserve to enjoy a cup of freshly roasted coffee. And we will keep training, educating, practicing, and obtaining more experience to keep providing that every day.

EDUCATION AND PRACTICE

    Practice and experience would help a lot when it comes to coffee roasting. But it is not enough, that is why we do not only consider ourselves experts but also professionals because we are educated, trained, experienced, and certified by the Specialty Coffee Association to affirm this.

ADAPTABILITY AND CAPACITY

    Apart from that, Martines Family Coffee Roastery to be able to provide freshly roasted coffee counts with many sizes of coffee roaster machines. One of them is 500 gr, for our online store. Another one is 15 kg for small to medium businesses and finally, 60 kg - for the big ones.
    The 500 grams and 15 kg count with the latest technology computers that allow us two specific things. The first is to observe the process in detail, and the second is consistency in roasting. But we still keep the essence of this art and handcraft process. The roaster is the one who controls this process and decides what the machine should do. We do not use automated roasting machines.
    Our aim is not to achieve the perfect roast, we aim to roast each coffee in the best way possible, and one of the tools that help us is the technology included in our roasters, which assures consistency in every freshly roasted coffee.
    We tend to roast and send your order within 24 hours after confirming it by our team. We do not keep roasted coffee in our warehouse. In that way, freshness in coffee, as mentioned before, could be held for three weeks. Because the more time the beans are in contact with oxygen, light, moisture, and high temperatures, the faster is the process of oxidation or freshness reduction. Each order from the online store will be confirmed by phone call. In which we can discuss the delivery date, roasting, or grinding specifications.

HOW TO RECOGNISE A FRESHLY ROASTED COFFEE

    Every coffee that is offered in our online store is not waiting in our storage to be dispatched. We always roast the coffee after confirmation. That way, the client can receive it as fresh as possible, and it is realizable because of our sample roaster of 500 gr Besca Bee. Having that capacity, we can assure you that every coffee will be roasted after the order. The only exceptions are the Martines blends and Aromatic coffees, which are roasted within 1-4 business days and stored in beans, based on the high level of rotation.
    But how to know if coffee is freshly roasted. Generally, to know if coffee is freshly-roasted or not is quite complex unless the scientific analysis is applied. However, some variables can be taken into consideration, but can not be taken, as the last word:
•    Aroma: it should be intense, but please do not conclude if the coffee does not have a strong fragrance when you open the package, it means it was not freshly roasted. As mentioned before, The Specialty Coffee Association cupping form evaluates the intensity of the aroma. It depends on its characteristics.
•    Bubbling: We could say that this is the only visual way to identify if coffee is freshly roasted or not. When you brew the coffee, you may see bubbles foam in your cup or during extraction.
•    Taste: tasting or cupping freshly roasted coffee, objectively, is not as easy as we think. That is why there are people who are training for years to describe coffee by tasting it. A freshly roasted coffee does not necessarily have to be tasty because for three main reasons. The first one is the quality of the green beans. Second, the profile of the coffee, as not all the coffee can be tasty, but they could have a high body with a fruity aromatic profile. And three, the way of roasting. If the roaster could not roast the coffee correctly, it could have a flat, smoky, burned, or sour taste.

ADVICE TO KEEP COFFEE FRESHLY ROASTED LONGER

    The best option to keep freshness in coffee is to order in beans and grind as much as you need at the moment. Order the quantities that you would be consuming for no more than three weeks past that period, the freshness of coffee starts decreasing, scientifically proven.     All of this because they are in a package, with valves, and in beans.
When you receive "Martines" freshly roasted coffee, there is no need to put it in a specific container because our packages comply with the conditions to keep the freshness of the coffee for three weeks, as long as it is closed properly. Just grind as much as you need at the moment, and prepare your freshly roasted coffee in a preferable way, espresso, french press, AeroPress, or filter. Please note that after three weeks, your coffee will start losing its freshness. That does NOT mean that it is expired and not suitable for consumption. You may still drink it within one year after it was roasted. However, the aroma and taste will change or fade.
    So remember, to get freshly roasted coffee is significant, but it is not only about that. It also needs to come from fresh green beans and be roasted in the best way, no in the perfect one and packed in the right conditions to keep the freshness of the roasted coffee for a maximum of three weeks.
