Located at an astounding 1889 masl in the Jaen region of Peru, La Fila Farm is managed with meticulous care by producer Hernan Ramirez. At this altitude, the Caturra trees grow slowly, allowing the beans to develop a high density and intense flavor concentration.

The Craft: Natural-Anaerobic Innovation
What makes this coffee truly special is the Natural-Anaerobic fermentation. Unlike standard processing, the coffee cherries are placed in sealed, oxygen-free tanks for a specific period before being dried naturally. This anaerobic environment allows unique yeast and bacteria to interact with the sugars in the fruit, resulting in the distinct tropical and boozy stone fruit notes that define this lot.

At our roastery in Sofia, we apply a Light-Medium roast to perfectly balance these experimental fermentation notes with the coffee's natural sweetness.
