Producer Story – San Francisco Farm, Apaneca
Andrés Salaverría represents the fifth generation of a family deeply rooted in El Salvador's coffee tradition. From early childhood, he was immersed in the world of coffee, accompanying his father to the mill and learning every aspect of the craft.
After earning a master’s degree in Coffee Science & Economics from the Ernesto Illy Foundation, Andrés returned to lead the family’s farms with a vision for modern specialty coffee production. Today, they manage several farms across Atiquizaya, Jayúa, Concepción de Ataco, and Apaneca, focusing on innovation, sustainability, and quality micro-lots.
The San Francisco Farm, located near La Majada, features fertile volcanic soils, natural forest reserves, and a commitment to selective harvesting. The farm not only protects local biodiversity but also invests in community health and education initiatives.
This Ethiopia variety, processed with the natural anaerobic method, reflects a bold, floral, and fruit-forward profile, showcasing both the altitude and the meticulous care with which it's grown and processed.
