Coffee roasting is an art that demands time, experience, and education to be able to master it and to be able to do it right. It is a handcrafted process that has a lot of history and the same time, has a lot to do with physical and chemical reactions in the green coffee beans.

Through the years, many professionals worked on improving or modifying this process to the point, that the industry talks about roasting profiles. But lately, there is a new term called - Omni roasting that has created a controversy. Let’s figure out why?

 

 

  • WHAT IS OMNI COFFEE ROASTING?

 

It is the new way of roasting, a controversial tendency among coffee roasters. The purpose of this is to roast one coffee in a way that can be brewed or prepared in any possible way.

 

 

  • WHAT ARE THE BASES OF THIS WAY TO ROAST COFFEE?

 

The idea of this method is to be able to roast the coffee in such a way that, when brewed in different methods, could preserve the natural and characteristic aromas, taste, and flavor of the roasted coffee. What does it mean?

It means that, for example, if you brew it in an espresso or filter, the taste and flavor of the coffee will not change, or if it does, it would be almost unperceivable. In that way, it does not matter how you consume your coffee. You will perceive the same aromas, tastes, and flavors.

 

 

  • WHY IS OMNI ROASTING LEVEL CONTROVERSIAL?

 

There are 2 points of view among people in the industry. The first ones affirm that it is impossible to find a suitable roasting profile to apply different brewing methods and perceive the same characteristics. They argue that every coffee is distinctive in many ways, from origin till process and more, as is the way of roasting, and because of that as other factors, not all the coffee are suitable for this kind of roasting.

On the other hand, some people affirm that it is possible to find a roasting profile for the roasted coffee beans that will allow them to be brewed in any method.

 

Martines Family Coffee Roastery head roaster Alexander Skrinjaric believes that it is true that coffees tend to have many differences among origins. However, at the same time, he believes that there is a thin line where an Omni roasting is located, and if found, even the most difficult to roast beans such as our new specialty coffees – China Luo Falimy, Ethiopia Halo Hartume Farmers, El Salvador Anaerobic Edith Eleonora Lemus could be prepared in different methods.
