Because the reason is you!
Family roastery "Martines caffe" is based on several principles, which we follow strictly during all these years in the industry. One of them is that the coffees we offer to our customers should always be freshly roasted. For this reason, we do not keep products in stock so that they do not stagnate. Instead of that, we roast the coffee after the order. And since many people have asked us the question: "Isn't the coffee too fresh?", We covered this topic in our previous article, explaining about the roasting date and after how long it is good to be consumed. But in the following lines, we will explain why it is important that the coffee you buy is fresh and how to recognize that. We will also reveal a few details about the order preparation process itself.
How do we do it?

All the small packages of coffee are roasted under the attention of our Head Roaster and Quality Expert from Peru - Alex, who carefully supervises the process, applies knowledge and experience using his five senses to execute a perfect roasting. And of course, if a customer has specific preferences about coffee and its roasting level, it is taken into consideration, which is one of the proves that each package from Family Roastery "Martines caffe" is prepared after the order is confirmed.
Once the coffee beans are already roasted, we fill them into special bags. They have a valve - through which the carbon is released from the package but retains the maximum coffee aromas and flavors, preventing the entry of oxygen. On each coffee package, you will find a description of the product, date of roasting, by who is prepared, and for whom? Because we care about the details and the special attention towards each of our clients.
How do you know that the coffee is freshly roasted?
There are a few details you need to pay attention to when buying coffee to find out if it's fresh or if you've been misled. How? The aroma must be strong when opening the package. You can check the freshness of the beans by grinding a few of them and pouring hot water over, and if there is bubble foam (so-called "blooming"), then the coffee is freshly roasted. And the taste must be complex and lively. Another significant thing to look for is whether the beans are oily. The shinier they are, the older they are, and this is a sign that all the oils have "come out" therefore the flavors and aromas are also mainly lost.
If you are a connoisseur of this preferred drink, you need to carefully choose the place from which to buy coffee, because as with most foods - the fresher, the better. In large retail chains, it is almost impossible for coffee to be roasted soon, so it would be better for you to go to specialized coffee roasters or shops, which in most cases stick to quality and will probably pay you the attention you need. As for the price - it may be a little higher if you choose a local roastery, but remember that in addition to the final product, you get part of the soul of the roaster, the farmer, and every one, part of the coffee chain. That is how you become part of a story!
