Coffee roastery - what is it?

In general terms, "coffee roastery" refers to a business or enterprise where green coffee beans are roasted. It does not matter whether this activity is performed in a large factory with dozens or even hundreds of employees or a small family roastery, the methodology for roasting coffee beans is similar. You may then wonder how to choose reliable coffee roasters that you can trust since they all look alike? Businesses follow generally accepted rules for roasting green coffee, however, the main difference comes from the fact, that each company adds something new or modifies one of the stages that distinguish them from each other. It is also very important how much knowledge and experience the master roasters have gained over the years of practice because they are the key figure in every coffee roastery, and their actions contribute the most to the result in the cup.

In that sense, if you are currently in a situation where you have not chosen a suitable coffee roastery for personal consumption or a future partner in your professional endeavors, you should start with a detailed study. Then you will conclude what distinguishes the different coffee roasteries and which is closest to your needs and values.

How does the "magic" happen in the Family Coffee Roastery "Martines"?

We can tell you a lot about the various processes in coffee roasteries, step by step. But we will probably omit some detail, or we will not be accurate in the description because we do not know the individual approach of each. Instead, we will share how we at Martines prepare our specialty coffees for you - our customers.

Before we move on to the general process of roasting beans, there are a few steps we would like to mention in our practice. Namely, we start with a careful selection of raw materials and farmers from whom we buy green coffee. Once specialty coffee has arrived at the roastery, the next goal is for our certified master roaster Alex to roast it in the best and correct way, according to the needs and preferences of each client. How does he do it?

He starts by measuring the density and moisture of the raw beans, then roasts a sample and performs degustation (cupping) to make sure he has chosen the right approach and level of roasting. And then, if necessary - correct. After Alex has determined the desired cup profile, he continues to roast the main batch of specialty coffee Arabica. The ready beans are inspected, and they pass through quality control. The final step is the packaging of the coffee. Also, a very significant stage to which we pay special attention. Because as we shared in our previous article - the packaging of specialty coffee has requirements that help preserve the taste, aroma, and freshness of the beans.
