The moka pot is unalterable part of almost every household, especially in Bulgaria. It is really common way to brew coffee and it would be hard to mess it up. However, we decided to prepare a small guide how to DO IT YOURSEFL at home.

The moka pot contains three parts. The down section is where stays the water and comes usually with a small pressure valve. In the middle section is where the grinded coffee stays, so called coffee basket. In the upper one is the place where the brewed coffee is contained.

This brewing method is really suitable for home use and it takes only a few minutes to be ready.

Things you need:
-    Moka pot
-    20-22g of coffee (medium-dark roast, full city)
-    Hot water – 96°С, around 100ml
-    Coffee grinder
-    Kettle
*the quantities of the coffee and water are for example, you can change them, using the ratio 200g coffee/ 1l water

Step 1:
Warm up the kettle with water up to 96 C. The warm water allows the extraction of the coffee faster and preserves the moka pot from overheating and burning the coffee.

Step 2:
Grind the coffee. Usually the grinding should be courser than the espresso, but finer than filter or French press. If the coffee is too fine this could cause over extracting, more bitter taste. If you buy ground coffee, you should specify for what use you need it or check the package description.

Step 3:
Pour over the hot water in the down part of the moka pot. Fill till the pressure valve. Afterwards fill the middle part or so called “coffee basket” with ground coffee.

Step 4:
Distribute it evenly trough. Put back the middle part inside the bottom section of the moka pot where the water is. Clean the coffee basket surface, make sure there is no any coffee one the borders.

Step 5:
Put over the top part of the moka pot and carefully twist it to piece together all the parts. The bottom might be hot, watch out!

Step 6:
Put the moka pot on the hot-plate to boil. Use middle temperature. Leave the moka pot lid open.

Step 7:
If you have managed to do right all the steps so far, the coffee should start going out in top part of the moka pot in thick golden-brownish syrup. Listened carefully for a gurgling sound, which means that the coffee is ready and almost all the water went through the coffee. Remove the moka pot from the hot-plate and put it to a cold towel in order to cool down the bottom part or use running cold water. In this way the extraction process will finish and the taste will be it should. Longer extraction will cause more bitter taste.
